Vegetable Soup with Hamburger
This is an economical soup and very good. Use ground deer meat if you have
it. It makes excellent soup. My mother always used celery and onion and
added other vegetables that were available. Use fresh if you can, but frozen
green beans and corn work well. Sometimes fresh vegetables are very
expensive. The idea is to economize. Freeze portions of this soup for a quick
meal.

1 - 1 1/2 lb hamburger or deerburger (ground deer meat)
4-5 c water
2-3 c beef booth or stock
1/2 t salt
pepper
2-3 cloves garlic
1 med onion
1 large can diced or stewed tomatoes or 1 quart home canned
tomatoes
3 stalks celery (or more)

Place meat, salt, pepper, and water in large pot and boil. Break
ground meat into bite-size pieces. Cook for 15-20 minutes until
meat is done. If using hamburger, you may wish to remove
the meat by straining through a colander, chill the broth, and
remove the hardenedd fat that comes to the top, then replace
the meat. Deer meat has no fat.
Add beef broth or stock (optional), sliced onion, garlic, sliced
celery.
Add any combination of other vegetables you like and simmer
until vegetables are cooked. For example
1 pkg cut frozen green beans
cut corn
1 large cubed potato
cubed rutabega
sliced carrots
green pepper
beans, e.g. cooked pinto beans
1/4 head cabbage shredded
sprig of rosemary for flavor
fennel root is nice
or whatever you like
Add more salt to taste. Prepared broth may be very salty, so
be careful.
You can use a roast rather than ground meat. Boil the roast,
separate the fat, pull apart the meat, and proceed.
