Roasted Onion Soup
Delicious, rich, and very easy soup recipe. This is especially nice in fall and
winter. Serve with French bread and grated cheese. I like Italian cheese like
mozzarella that melts easily or Muenster or Gruyere.

4-5 cloves garlic
5 large red onions sliced
1/4 c olive oil
2-3 T flour
1 T sugar
2 quarts beef broth
1 c dry vermouth
salt to taste. (careful, some beef broth is already highly
salted)

Toss onion slices, garlic, and oil together and place in large
roasting pan or 9x13 baking pan. Place in 450 degree oven
for about 45 minutes.

Combind flour and sugar. Add to onions and stir. Replace in
450 degree oven for 30 more minutes.

Add broth and dry vermouth. Heat on top of stove.
