Greek Kourabeithes Cookies There are many
similar variations of these delicious cookies. This is authentic
from my friend's Greek mother-in-law. They're good anytime
and traditional in our families for Christmas and Easter.
- 1/2 lb. butter (2 sticks)
- 4 T powdered sugar
- 1/2 t vanilla
- pinch salt
- 2 1/2 cups sifted flour
- 1 c chopped pecans, walnuts, or almonds (optional)
Old Fashioned Cookies
Cream together butter and sugar. Add vanilla, salt. Gradually mix in
flour. Blend well. Stir in chopped nuts. Roll 1-2 teaspoons of dough
into oblong balls. Place on ungreased cookie sheet, bend into 1/2
moon shape, and bake at 250 degrees for 50-55 minutes. While warm
roll in powdered sugar. Store in container with lots of powdered sugar.
An interesting variation is to add 1/2 c chopped pine nuts.
